Scientists have discovered substances in beer, that when marinated into meats, protects us from ingesting precarcinogenic substances. Another good reason to cook with beer. I like to use my food saver to help infuse the marinade into the meat I am cooking by removing the air, and allowing the liquid to be forced into the meat by negative pressure. For example, using a lower hopped beer like Brown Ales, Amber Ales & Lagers, or Porters works quite well with beef and pork. Fish and fowl seem to taste best when marinated in lighter less hoppy beers like Hefeweissen, Wits, Light Lagers, and Sour beers. So fire up the barbeque, get your meats marinating, and enjoy!
